Grilled Watermelon with Cayenne and Lime

Refreshing and juicy but with a toasted complexity that is balanced by the lime, this unique appetizer is as tasty as it is hydrating. Serves 12.

  • 1 medium watermelon
  • Zest of 1 lime
  • 1/4 cup plus 2 tablespoons lime juice (about 5-6 limes), divided
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 1 teaspoon cayenne pepper
  • 1/4 cup plus 2 tablespoons diced fresh mint, divided
  • 1/4 teaspoon medium-coarse Kosher salt
  • 1/2 cup plain yogurt sauce (optional)

Slice watermelon into 3/4-inch thick wedges, keeping the rind on.

Whisk together 1/4 cup lime juice, lime zest, olive oil, honey, and cayenne.

If making yogurt sauce, whisk yogurt with remaining 2 tablespoons lime and 2 tablespoons mint in a separate bowl, Set aside both mixtures.

Heat outdoor or stovetop grill to high. When grill is hot, brush each side of watermelon slices with lime-honey mixture and grill until you see grill marks, about 1-2 minutes, then flip and grill another minute.

Remove watermelon from grill, sprinkle with salt and mint leaves. Repeat until all watermelon is done or grill watermelon as needed. If using, serve yogurt sauce on the side.
